Can I export the statement itself?

Yes, from Settings and then Data export, with the column granularity you want: daily, weekly, monthly or one total column. The file carries the real period labels rather than generic ones, and the row count is shown before you download.

Reports and raw data are separate options there. The statement, product profitability and inventory are reports; orders, order lines, payments, refunds, ad spend and cost rules come out as raw rows for your own analysis.
