Can nouz change anything in my store?

No. Every permission nouz asks Shopify for only lets it read. It can look at your store, but it cannot change it. No product, price, order, stock level, customer, theme or checkout setting can be changed by nouz.

You can see what nouz reads. Open Settings, then Integrations, click the Shopify row and look under What nouz can read. nouz reads your orders, refunds and payments, back to your very first order. It reads your products with their prices and weights, your stock and your unit costs. It also reads your shipments, your store traffic and your store's name, currency and timezone.

Customers are told apart by an ID only. nouz stores no names, emails or addresses.

nouz creates only a few things of its own on Shopify's side. It asks Shopify for two notifications: one when the app is uninstalled, and one when a big export of your history is ready. It asks for those big exports, which Shopify calls bulk operations. And when you use Cancel plan, it cancels its own plan.

It never adds a script to your shop. Your page speed, your checkout and your customers' browsers stay untouched. The costs and weights you enter in nouz stay in nouz and never go back to Shopify. You can take nouz's access away at any time.
