Once every night, before the daily email, so the morning numbers are fresh. You can also press Sync now at any time to pull everything since the last run.

The very first sync after connecting is bigger: it backfills your entire order history, every order the store has ever taken, in resumable chunks. Every page shows how old its data is and which sources are behind, so you always know whether what you are reading is complete.
